Description

The Pasquet Cognac House is located at Chez Ferchaud-Eraville, in Bellevigne, Charente. In 1970, Jean-Luc Pasquet inherited his uncle Albert's estate and took charge of the family business, which comprised 8 hectares of vines in Grande and Petite Champagne. The estate has grown to 14 hectares, cultivated since 1995 using certified organic methods. The 20 hectolitre still produces fine, rich eaux-de-vie from double distillation, which are then aged for a minimum of 4 years, i.e. an additional 2 years of ageing in wood, as required by law to obtain the "Cognac" designation. The company is now run by Jean Pasquet and his American-born wife Amy.

After harvesting, the grapes are pressed directly and the juice is put into vats for fermentation. Their wines are fermented using yeasts that are 'endogenous', meaning that they are naturally found in the grapes. The use of natural yeasts and the absence of sulphites reinforce the guarantee of a true terroir product.

Pineau des Charentes is the aperitif par excellence in the Charentes region, but it also goes wonderfully with foie gras or a Roquefort pie. You can also enjoy it with a good goat's cheese.
